The Mitica® brand of Pecorino Romano is aged a minimum of 5-6 months. It is full-flavored, aromatic and sharp. Dry salting gives the cheese pronounced saltiness, but it is less salty than the average Pecorino Romano. It is a great option for the price conscious.
